Bar, Trade Show and Restaurant Photography: Mixed Color Temperature Is the Real Problem, Not Low Light
Lay out a week of frames in a grid and the pattern becomes obvious. Oysters and a glass of white under window light. A trade show booth lit by a blue LED wall and a tungsten spot at the same time. A backbar with three hundred bottles glowing at 2700K. A restaurant pass under heat lamps. An Air Tractor against open sky. Twelve frames, and no two of them share a light source.
The instinct is to blame the darkness. It is almost never the darkness. Modern sensors handle ISO 6400 without complaint, and an f/1.8 prime buys back two stops before the ISO dial moves at all. What actually ruins the set is that the light in these rooms is not one color. It is three or four colors arriving from different directions at different intensities, and a single white balance value cannot serve all of them.
Why One White Balance Value Fails a Room
A backbar is the clearest case. The bottle shelves are lit from behind by warm LED strips somewhere near 2700K. The ceiling cans over the service well are usually cooler, often 3500K to 4000K. If there is a window or a doorway, daylight is pouring in at 5500K and hitting the near end of the bar. Set the camera to tungsten and the daylight side goes electric blue. Set it to daylight and the shelves turn orange sludge.
There is no correct single value. There is only a chosen compromise and a decision about which part of the frame you are willing to sacrifice.
The practical workflow is to shoot RAW, set a custom white balance off a grey card held in the dominant light, and fix the rest selectively in post with local temperature adjustments. Auto white balance is worse than useless here because it shifts frame to frame as you pan across the room, which means a gallery of twelve shots comes out looking like twelve different evenings.
If you are delivering JPEGs straight out of camera for a client with a same-day deadline, pick the light that falls on faces and match to that. Backgrounds can be wrong. Skin cannot.
Trade Shows: Turn On Anti-Flicker Before You Take a Single Frame
Exhibition halls are lit by banks of LED and fluorescent fixtures running off mains AC. They pulse at 100Hz or 120Hz depending on the grid. At shutter speeds slower than about 1/125 the eye and the sensor both average the pulses out. Above that, individual frames land on different points in the cycle, and you get two failures: horizontal banding across the frame, and inconsistent exposure and color from shot to shot in a burst.
Canon calls the fix Anti-flicker Shoot. Nikon calls it Flicker Reduction. Sony calls it Anti-flicker Shooting. All of them do the same thing, which is to detect the pulse frequency and delay the shutter release by a few milliseconds so it fires at the peak. It costs a small amount of shutter lag. It saves the entire shoot.
Turn it on when you walk into the hall, not after you notice banding on the back of the camera.
The other trade show constraint is booth lighting design. Exhibitors light their walls, not their people. A presenter standing in front of a bright display panel is a backlit subject, and matrix metering will underexpose their face by a stop and a half. Spot meter on the face, or dial in permanent positive exposure compensation and check the histogram every few minutes as you move between booths.
Bottle Shots and Backbars: Expose for the Label, Not the Glow
Three bottles on a white surface is a product shot, and the failure mode is specular highlights. Glass and foil labels throw hard reflections that clip to pure white and take the printed detail with them. Once a label highlight is blown, nothing recovers it.
Meter for the brightest label, then pull down another third of a stop. Shadows on a bottle shot are recoverable. Highlights are not.
Direct on-camera flash is the wrong tool for glass. It produces a mirrored circle of the flash tube in the bottle shoulder and a hard shadow behind. Bounce it off a ceiling or a wall to the side, or skip flash entirely and use window light with a piece of white card as fill. A sheet of A4 paper propped against a water glass works.
For the wide backbar shot, the opposite problem applies. The shelves are the light source, so the camera meters them as bright and drops everything else into black. Expose so the bottle glow sits just below clipping and let the room around it go dark. That is what the room actually looks like to a person standing in it.
The Restaurant Pass: Heat Haze, Steam and One Second of Access
A working pass is the most hostile environment on this list. The light is a strip of tungsten heat lamps at maybe 2800K, the steel reflects everything, steam rises through the frame and refracts, and you have a few seconds before you are in someone's way.
Shoot wide open and fast. Set the lens somewhere around f/2, push ISO to whatever holds 1/250, and accept the noise. Steam reads as texture at high ISO and as mush at slow shutter speeds, so shutter speed wins that trade.
Frame for the geometry. A pass is all parallel lines, hanging spoons, stacked ceramic, and the visual interest is in the repetition rather than in any single element. Get low enough that the heat lamp strip is in the top of the frame and let it flare slightly. It reads as heat.
The Daylight Frames Are What Break the Set
The odd images in a mixed digest are the clean ones. A port from a hillside. A crop duster against blue sky. Bright, high-contrast, straightforward exposure.
They break the set because they are colorimetrically correct while everything else has been nudged warm or cool by hand. If the digest is going to be viewed as a grid, grade the daylight frames slightly toward the interiors rather than leaving them neutral. A very small warm shift and a pull on the blue saturation is usually enough.
Two technical notes on those frames specifically. Aircraft need a shutter speed slow enough to blur the propeller, which for a turboprop means roughly 1/250 to 1/400. Freeze the prop at 1/2000 and the plane looks parked in mid-air. And long lens shots across water carry atmospheric haze that no amount of contrast slider recovers, so a circular polarizer at the time of capture does more than an hour in post.
The Kit That Covers All of It
One body, one fast normal prime, one short zoom. A 35mm or 50mm equivalent at f/1.8 handles bars, restaurants and bottle shots. A 24-70 equivalent handles trade show floors where you cannot back up. Everything else is optional.
On a crop body, remember the multiplication before you buy: a 35mm on APS-C frames like a 56mm, which is too tight for a booth interior. Go to 24mm or wider for the zoom and 23mm to 28mm for the prime if crop is what you are carrying.
The rest is white balance discipline and the habit of checking the histogram before you move to the next room.
